    Fermentation is everywhere – in our bodies, in our foods and in the natural world around us. It has shaped culinary cultures as a way of preserving seasonal fruits and vegetables, breaking down inaccessible nutrients while making everything delicious. Come and taste kimchi at the fermentation station with Hoon Kim, a chef who has set up Korean and Japanese pop-up restaurants across Cornwall.
